Healthy Snacks...Toddler Approved!

Common Scenario:  You come home from work still hyped up from the incomplete list of to-do's left on your desk, pick up the kids and do the mental shift-gears routine.  You get home and everyone is ravenous and it is going to take 30-40 minutes until dinner is ready. Babies are crying, your fuse is short...and you reach for the not-so healthy snacks to pacify everyone.

LET ME HELP YOU!!!

This is the time to create something that has delightful interest (looks good), and is also healthy.  I debut...the snack platter!
Yes, that is right, I pulled out left over eggs and breakfast sausages from that morning and did a quick re-heat, along with nuts, oranges, a few crunchy green beans, dehydrated apples from the kitchen and chips with guacamole ALREADY on them (healthy fats are a must around my house!). The only thing that took about 3 minutes to prepare was sliced bananas with Almond Butter, and I might have snuck a multivitamin in between the nut butter and fruit:)

I loved the fact that the kids had a very healthy snack within 5 minutes, and I felt confident about the nutrition they were consuming.  No sugar rushes, no empty calories, just energetic boys with big eyes as they saw such a fun selection to choose from!
